Directions

Peanut oil, for frying

Ingredients

  • 1 cup cornmeal
  • 3/4 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 can peach halves in syrup, drained
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon almond extract
  • Confectioners' sugar, for garnish
  • Orange Glaze, recipe follows

Heat deep-fryer to 350 degrees F.

Combine cornmeal, flour, sugar, and salt in a large bowl.

Remove 3 peach halves from can and cut into small cubes.

In a small bowl, combine buttermilk, eggs, butter, cubed peaches, and almond extract. Add wet mixture to dry and stir well until combined.

Using a small ice cream scoop, drop batter into the hot oil. Fry for 1 minute per side. Flip halfway through cooking before it's too heavy to turn. Remove to a paper towel lined sheet tray. Sprinkle immediately with confectioners' sugar. Place on platter and serve with Orange Glaze.

Orange Glaze:

In a large bowl add the confectioners' sugar and drizzle in the orange juice while whisking.

    I've made this a few times.. & will continue to make it..
    Soo yummy!!
    I tried it with pineapple, instead of peaches once..(wrong thing to do
    So I just stick to the recipe..
    My family loves this!!!!

    I've made this episodes recipes before and they were very good, but wonder why missy Gina won't 'allow' her husband to taste the food he's preparing. What's wrong with that? It's always about what she wants....let him taste if he wants to, it's his kitchen, too.

    I seen the show for mother Day and had to try this.I used 4 peaches half in add a dash or 2 of cinnamon and 1 extra tsp of sugar.I add a little less orange juice then the recipe call for and add the peaches juice to equal the 1/4 cup.These are simple and so yummy but eat them hot for the best result..Love you guys
