Ingredients

  • Eight 7 1/2-inch whole-wheat tortillas
  • 2 cups grated smoked Cheddar
  • 2 cups baby spinach
  • 8 slices bacon, cooked and crumbled
  • 2 Granny Smith apples, cored and thinly sliced
  • Nonstick cooking spray, for cooking
  • Sour cream, for serving

Directions

Sprinkle 1 tortilla with some cheese, a small handful of baby spinach, bacon and sliced apples. Press another tortilla on top to make a quesadilla. Heat a nonstick skillet over medium-high heat and spray with nonstick spray. Cook the quesadilla on each side for 2 to 3 minutes until golden. Repeat with the remaining tortillas and fillings. Slice into wedges and serve with sour cream.

    very good, it would have been better if I followed receipe closer, I added carmelized onions, used just sharp cheddar cause that is what I had and did not add spinach

    Made this tonight and rate it as five stars! I did put additional cheese as the last layer of ingredients before putting the tortilla on top. Made a margarita and it was the perfect combination. Will definitely make this again.

    My husband is a diabetic and isn't a real breakfast food fanatic so I'm always looking for something easy enough for him to cook for himself that has protein in it. He loved this although I left out the bacon. It was quick, easy and delicious. For myself I would have added the bacon because what doesn't bacon make better?
