Ingredients

Blue Cheese Dipping Sauce:

  • 1/4 cup Danish blue cheese, crumbled
  • 1/4 cup buttermilk
  • 1/3 cup sour cream
  • 1/4 teaspoon sugar
  • 2 teaspoons apple cider vinegar
  • Salt and freshly cracked black pepper

Seasoning:

  • 2 teaspoons Neely's Dry Rub
  • 2 teaspoons kosher salt
  • 1/4 teaspoon cayenne pepper
  • Peanut oil, for frying
  • 3 pounds chicken wings, cut at joint, washed and dried
  • 1 to 2 tablespoons lemon-pepper seasoning
  • 4 tablespoons salted butter
  • 1 clove minced garlic
  • 1/2 cup hot sauce (recommend: Texas Pete's)
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon Worcestershire sauce
  • Carrot and Celery Sticks, for serving

Directions

For the dipping sauce:

In a small bowl, mash the blue cheese into the buttermilk and sour cream. Mix in the sugar and the apple cider vinegar, and season with salt and pepper, to taste.

For the seasoning:

Mix the dry rub, salt, and cayenne together in a small bowl.

Preheat deep-fryer with peanut oil to 350 degrees F.

For the wings:

Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.

Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.

Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.

Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.

Add fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Serve immediately after tossing the wings with the sauce. Serve with the blue cheese dipping sauce and celery and carrot sticks.

    The Best Wings We Ever Made!

    My husband and I made a 10lb batch of these wings last night for our big family's Super Bowl themed dinner (we tripled the... recipe) and they were such a big hit. I have no complaints, other than the fact we used Spanish paprika because it was in the pantry and the wings had a little more of a smokey/spice to them, but that was our fault, not the recipe's. We've been looking for a great wing recipe for some time and we finally found it! The wings were easy to prepare, delicous right as they were done, and even better when they'd cooled off for about 15 minutes. I would suggest letting the lemon pepper sit on for a couple of hours if you really like that flavor. The 10 minutes or so we let them set just wasn't enough. These wings aren't too hot and they have a wonderful tangy-ness and just a hint of sweet. We will 100% be coming back to try more of the Neely's recipes, and soon! Also, we used store bought blue cheese dressing because we were afraid of taking on too much. Next time we'll use their recipe for that.Read more

    Im making these wings for my husband later this week, and after reading the reviews im sure they will be great! I had to... google for the dry rub recipe and since so many others were looking for it i decided to post it. THE NEELY'S DRY RUB 1 1/2 cups paprika 3/4 cup sugar 3 3/4 cups onion powder Add all ingredients to a bowl and stir until combined. The recipe makes 2 1/2 cups of dry rub and can be stored in an air tight container for up to 6 months.Read more

    I love wings. Had some good ones over the years at various restaurants across the nation. Pat's wings are better than any... wings I've ever purchased. Follow this recipe word for word and you will be amazed!! Try Marie's Blue Cheese dressing (in most stores) if you don't feel like making the dressing from scratch.     The sauce for Pat's hotwings were great. Reminds me of the wings I had at Picadilly Pub in Westborough Mass. I didn't have... the rub but the wings still turned out great. I wasn't a big fan of the blue cheese dip. I will try it again b/c this time I used light sour cream perhaps that was the difference.Read more
