Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons orange juice
  • 1 clove garlic, finely minced
  • 2 scallions, thinly sliced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons raisins
  • 2 tablespoons toasted pine nuts
  • 1 orange, peeled and coarsely chopped
  • 1 cup chopped cooked chicken (optional)
  • Salt and pepper

Directions

In a strainer rinse the quinoa under running water and drain. Combine the quinoa and water in a saucepan and bring to a boil. Reduce the heat to low, cover and simmer until all the of the water is absorbed. In a large bowl combine the remaining ingredients and season with salt and pepper. Stir in the quinoa and mix well. Serve chilled or at room temperature.

    Easy to make quickly and tasted great. It was light but I am full. I didn't add chicken or the actual orange pieces, but added the juice from the orange I was already eating! Tasted it as is and thought it was great! About half way through I decided to add some Feta cheese and thought that was great too, but if you go this route, keep in mind that Feta could easily overpower this recipe.

    This is an easy recipe. I changed it a bit. I simmered the chicken in chicken broth and then cooked the quinoa in the stock left over from the chicken. I added frozen peas, finely chopped celery and crasins. Instead of oranges, I used mandarin oranges.
    I am planning to use this recipe to serve at a luncheon for 150 women. This salad tastes fresh and light.

    This was so easy to make and had terrific flavor. It really doesn't make very much so I doubled it. Four adults devoured it. Will definitely make again!
