Ingredients

  • 4 slices bacon, chopped
  • 3 bunches mustard greens, trimmed and chopped
  • 2 tablespoons white vinegar
  • 2 teaspoons sugar
  • Coarse salt
  • 2 cups chicken broth

Directions

In a large skillet over medium high heat brown bacon and render its fat. Add chopped greens to the pan in batches and turn until they wilt, then add more greens. When all of the greens are in the pan, add vinegar and cook a minute. Season greens with sugar and salt. Add chicken broth to the pan and cover. Reduce heat to medium low and simmer greens 15 to 20 minutes then serve.

    Just great! My first time trying mustard greens and I bought a huge bunch each of spicy and regular. I also used thick cut bacon from a local farm. After reading reviews I added about 3 T of diced shallot and some garlic, skipped the sugar. I threw in a handfull of spinach at the end so it was bright green and also added a can of cannelini beans. It was knockout and drew raves. My new version of greens and beans.

    I remember grandma's "smothered" mustard greens fresh from grandpa's garden, but have never made them. Bought some from a vegetable stand and found Rachael's recipe. OMG, these were delish! AND so easy. I thought I had bought too much, (I got two big bunches but they do cook way down. Still had plenty to feed four. Also, I did spend a great deal of time cleaning them. Removing the hard stem and rinsing each leaf. If you like mustard greens, you will love this recipe! Thanks Rachael
