Ingredients

  • 6 hens, rinsed and pat dry
  • Coarse salt
  • Coarse black pepper
  • 1 cup defrosted orange juice concentrate
  • 1 cup aged balsamic vinegar
  • 3 to 4 tablespoons extra-virgin olive oil
  • 7 to 8 stems rosemary, chopped

Directions

Preheat oven to 425 degrees F.

Line 2 baking pans with foil for easier cleaning. Set a baking rack in each pan. Split hens and butterfly open and place 3 hens in each baking pan. Season the hens with salt and pepper liberally. Mix the orange concentrate, balsamic vinegar and olive oil and pour evenly over the hens. Sprinkle with rosemary and roast 15 minutes at 425 degrees F and 30 minutes at 375 degrees F.

    I made this lastnight so my Husband and my Daughter wouldn't have to take me out for Mother's Day! I'm so glad I did, We... Loved it... I did change it alittle. I marinated for an hour in the fridge with the orange consentrate, aged balsamic, Fresh and dried Rosemary, 4 fresh garlic cloves and I added garlic powder, and orange zest with the some juice from the orange. After the hour was up I put it on the countertop for 15 minutes. HINT: Don't put the Extra Vigin Olive Oil in the recipe, I tested one with it and that why alot of people said their hen was so bland! If your going to feed like 3 people make just 2 hens, Plenty Of meat for 3. If for 2 people cook 1 hen. Believe me my family can eat and they only ate a half of the hen. Another HINT: Chop up the Fresh Rosemary really good and I recommend even more Rosemary than what the recipe calls for. I love that fresh taste and look that the rosemary presents in this dish.     We live at 7000ft, would reccomend that you start at 425 for 15 then take it closer to 400 for the last 30. At 375 I had to... tent them for another 20 - 25 mins, but in the end they were beautiful and moist! Flavor was delicate. I added 2 cloves of garlic to the marinad then marinated them for 1 hr, used a dry poultry seasoning and the fresh rosemary, then roasted them on celery and onions on the rack - the aroma was wonderful.     The birds turned out moist and were a great color. Used fresh cracked pepper, sea salt, poultry seasoning, and fresh... rosemary to top it. The orange and balsamic really came through for us. I believe the only reason she split them down the back was for quicker cooking time and presentation. The presentation could be just as good leaving the birds in tack. Also, when served it you may be better off serving half a bird per person and letting people come back for seconds because they take up the whole plate. Overall great flavor and fun to make.
