I watched Rachael make this on tv and loved the way she sliced her veggies. I did mine the same way she did (not like it... says in the written recipe), with a vegy peeler so they came out long and thin like a very wide noodle. It was a beautiful presentation with the unusual colored tomatos and the wide sliced vegys. Did I mention it also tasted fabulous? It did! WIll make this many times this summer when I have fresh vegys from my garden to use.Read more
