Super Stuffed Baked Apples a la Mode

Ingredients

  • 4 large McIntosh or Empire apples, cored
  • 1 tablespoon lemon juice
  • 3/4 cup brown sugar
  • 1/4 cup instant oatmeal mix or rolled oats
  • 1/4 teaspoon nutmeg, a healthy grating
  • 1 teaspoon ground cinnamon
  • 4 tablespoons butter, cut into pieces
  • 2 ounces, 1/8 cup, golden raisins, chopped
  • 1/4 cup chopped walnuts or walnut pieces or pecans
  • 1 pint Dulce de Leche (caramel) ice cream or caramel swirl ice cream
  • Whipped cream, in a canister

Directions

Preheat oven to 425 degrees F.

Sprinkle cored apples with lemon juice. Mix next 7 ingredients and over-stuff apples. Bake 20 minutes in a small oven safe dish. Transfer apples to small bowls with a spoon and top with ice cream and whipped cream.

    I chose this recipe for baked apples and it did not disappoint. I couldn't find the recommended apples so I used Granny... Smith. They are harder so I baked them twice as long and they still could have baked longer. The topping is fantastic and serving a la mode with frozen yogurt was to die for. If I had to use G Smith apples again I would dice them up and sprinkle the topping on top and bake. We'll definitely use this again & it will most likely be the holidays. Thank you!!Read more

    These apples were WAY faster than making apple pie! I think I finished mine before the commercial break was over haha Very... easy to make, delicious... would make again! Only thing I did different was add dried cranberries instead of raisins (hubby isn't a fan) and I melted the butter before adding to mix. I also put them in the oven when I was done cooking dinner since the oven was already at 425 and let them cook 15 mins, then shut the oven off for about 30 mins.... melt in your mouth!Read more

    I reduced the sugar to 1/2 cu and they were still sweeter than we like; we'll try 1/4 cu next time. I melted the butter... (used 3 tbs butter/ 1 tbs grapeseed oil) and stirred it in; much easier than cutting in cold butter if you want to save time.Read more
