Ingredients

  • 2 tablespoons (2 turns around the pan) olive or vegetable oil
  • 1 medium yellow skinned onion, chopped
  • 1 large red pepper, seeded and chopped
  • 1 large green pepper, seeded and chopped
  • 1 large jalapeno pepper, seeded and chopped
  • 4 cloves garlic, crushed and chopped
  • 1 cup pale beer or vegetable stock/broth
  • 1 (32- ounce) can crushed tomatoes
  • 1 (14-ounce) can black beans
  • 1 (14-ounce) can dark red kidney beans
  • 1 tablespoon ground cumin
  • 2 tablespoons chili powder
  • 1 tablespoon cayenne hot pepper sauce, several drops
  • 1 teaspoon coarse salt
  • 1 cup spicy vegetarian refried beans

Toppings:

  • 8 ounces (2 cups shredded) spicy monterey jack or smoked cheddar
  • Chopped scallions, whites and greens
  • Diced fresh seeded plum tomato
  • Blue and red corn tortilla chips or black bean tortilla chips, for dipping

Directions

Over moderate heat, add oil to a deep pot and combine onion, peppers, and garlic. Saute for 3 to 5 minutes to soften vegetables. Deglaze pan with beer or broth, add tomatoes, black beans, red kidney beans, and stirring to combine.

Season chili with cumin, chili powder, hot sauce, and salt. Thicken chili by stirring in refried beans. Simmer over low heat about 5 to 10 minutes longer, then serve up bowls of chili and top with shredded cheese, scallions, and tomatoes. Place bowls on charger plates piled with assorted tortilla chips.

    I have been making several chili recipes from the FoodNetwork site. My family actually found this one to be the heartiest,... most delicious, even though it doesn't have any meat in it! Even my picky brother-in-law, who is a meat FREAK, couldn't tell the difference and actually preferred this version. Next, time, the only thing I will change is a bit less hot sauce than stated, but that is just my particular preference. The best part was, if you chop and drop, like Rachel always says, it truly does take 30 minutes! I sprinkled a bit of fresh chopped cilantro on top too! ENJOY! GUILT FREE!Read more

    This was great..although my prep time was not "10 minutes" as Rachael says..I guess I'm just a slow "chopper". I've made this... 3 times now and it's always great. I did have to add more crushed tomatoes for the consistency and I used the crushed tomatoes with green chillies you can find in the stores. My husband insists on having meat in his chilli so I added some cooked ground beef into his portion but I think I'll try adding the vegetarian beef crumbles as someone below recommended. This freezes very well. The last time I made it, I added some different kinds of chilli powders for an extra "kick". It's great with some cheese, chopped green onions, and a small dolop of sour cream on top!Read more

    This chili is perfect for that situation- I'm a lifelong vegetarian and my hubby is a meat eater. We use beer, the whole can... of refried beans to make it thicker, and cook everything twice as long as it says to get that soft consistency from the veggies and beans. My husband makes ground turkey on the side and mixes it in- it's perfect! It's so hard to find meals we can have together and this is definitely one! Delicious :)Read more
