Raspberry Ouzo Slush

What a refreshing cocktail! I love the combination of flavors: licorice from the ouzo, bright citrus from the lemon, and tart sweetness from the raspberries. Feel free to change up the flavor of the sorbet if you'd like; orange, lemon or strawberry would be just as delicious.

Ingredients

1/2 cup granulated sugar

1/4 cup lemon juice

1/2 cup ouzo

1 pint raspberry sorbet

Seltzer, chilled, for topping off

Lemon wheels, fresh raspberries and mint sprigs, for garnish

Directions

  1. Combine the sugar and 1/2 cup water in a small saucepan. Bring to a boil and cook until syrupy, 2 to 3 minutes. Remove from the heat and stir in the lemon juice. Let cool, then stir in the ouzo.
  2. To serve, place scoops of raspberry sorbet into glasses. Top with 1/4 cup of the lemon-ouzo simple syrup and some seltzer. Garnish with the lemon wheels, fresh raspberries and mint sprigs.
