Preheat the oven to 350 degrees F. Coat a 9-inch pie plate with cooking spray.

Combine the sugar, buttermilk, biscuit mix, melted butter, vanilla, and eggs in a blender and process until smooth. Pour into prepared pie plate and bake until browned and still a little jiggly (the pie will set as it cools), 30 to 40 minutes.

Let cool for 10 minutes before slicing into wedges. If desired, sift confectioners' sugar or cocoa (or a combo) over the wedges before serving.

    Great recipe. Super easy to make. No crust.. and you don't miss it. I grated fresh nutmeg right when the pie came out of the oven.

    made this twice. 1st time, i followed directions as written. turned out too custardy. Tried making it a 2nd time and used 3/4 cup Bisquick instead of 1/2 cup. The extra Bisquick Made it way better... more like a pie (rather than a custard. But this is actually very addicting. seriously tastes sooooo good!! I actually posted about this recipe on my blog anickh(dotblogspot(dotcom

    Thanks Robin! I lost this recipe over ten years ago. I looked at the time and then forgot about it. I always think of my grandparents when I have this. It is really great just by itself but is also great with fruit.
