Ingredients

  • 4 (5-ounce) tilapia fillets
  • Salt and ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 tablespoon olive oil
  • 1 ripe mango, diced
  • 1/4 cup chopped fresh cilantro leaves

Directions

Season both sides of tilapia fillets with salt and black pepper. Rub cumin and coriander all over both sides of fillets. Heat oil in a large skillet over medium heat. Add tilapia fillets and cook 3 to 5 minutes per side, until fish is fork-tender. Meanwhile, in a small bowl, combine mango and cilantro. Top tilapia with mango mixture just before serving.

    This was so good, I feel like good is an understatement! My husband and I and even the kids loved it! We pretty much stuck... to the recipe, no changes. I didn't see the episode so I wasn't sure what to serve with it...thankfully, our grocery store has an international aisle and we found a boxed couscous with mango flavoring. It was just excellent! My husband and I talked so much about it during dinner our oldest son was making fun of us! We both said we would pay $20 a plate in a restaurant for a meal like this! We will probably have this again within the month...it was super easy and quick. I can't say enough good about this recipe. Read more

    The fish & the couscous that was featured on the episode with this meal were delicious as is. I added chopped red onion,... chopped jalapeno pepper, 1 lime, and a tsp. of fresh minced ginger to the Mango Salsa and it was awesome. It was all so easy, especially the fish and the couscous.     You can have this on the table in way less than 30 minutes! Use a nice hot pan and the spices will create a crispy crust. ... Next time, I would double the mango mixture for the 4 servings. If I had extra time and ingredients, I might add some chopped onion and peppers to the mango mixture. I will make this again.Read more
