Ingredients

  • 4 (5-ounce) tilapia fillets
  • Salt and ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 tablespoon olive oil
  • 1 ripe mango, diced
  • 1/4 cup chopped fresh cilantro leaves

Directions

Season both sides of tilapia fillets with salt and black pepper. Rub cumin and coriander all over both sides of fillets. Heat oil in a large skillet over medium heat. Add tilapia fillets and cook 3 to 5 minutes per side, until fish is fork-tender. Meanwhile, in a small bowl, combine mango and cilantro. Top tilapia with mango mixture just before serving.

    Excellent seasoning on the tilapia. Mangos worked very well with the fish, even better by making a mango salsa (many... recipes, I used red onions, orange tomatoes, lots of cilantro, lime juice, and jalapenos). Wrapped the whole thing up to make fish tacos. Thanks for the recipe.Read more

    The fish & the couscous that was featured on the episode with this meal were delicious as is. I added chopped red onion,... chopped jalapeno pepper, 1 lime, and a tsp. of fresh minced ginger to the Mango Salsa and it was awesome. It was all so easy, especially the fish and the couscous.     You can have this on the table in way less than 30 minutes! Use a nice hot pan and the spices will create a crispy crust. ... Next time, I would double the mango mixture for the 4 servings. If I had extra time and ingredients, I might add some chopped onion and peppers to the mango mixture. I will make this again.Read more

    I substituted chicken for the tilapia (had it already and didn't want to go to the store). I added red bell pepper, cucumber,... and feta (had all on hand) to the couscous. Feta added more salty flavor which we all thought it needed. And at the end of the meal I felt I'd gone global and created something unique. Thanks RM.Read more

    I made this for dinner this evening and I thought it was very good. Easy to make and the fish came out wonderful. The only... change I made was to add some honey and a touch of chili powder to the mango salso to give it a little more zip! Also, instead of peas with the couscous, I used little bits of steamed carrots and some chopped green onion to give it a little bit different flavor. I will definately make this again.Read more
