Ingredients

  • 1 (12-inch) tail piece salmon fillet (about 1 1/2 pounds)
  • 2 teaspoons garlic salt
  • 3 tablespoons brown sugar
  • 4 tablespoons butter, cut into small pieces
  • 1 small red onion, thinly sliced
  • 1 (12-ounce) bottle beer

Directions

Preheat grill to medium-high heat.

Using aluminum foil, create an oblong cooking tray (approximately 13 inches by 8 inches by 2 inches) to be placed directly on grill. Place salmon fillet in center of tray. Season first with garlic salt, sprinkle with brown sugar, and then cover with pieces of butter. Top with sliced red onions. Pour beer of choice into tray to just below the highest point of the fillet. Cover tray with aluminum foil to envelope fish completely. Place tray on grill, cover with lid, and grill for approximately 8 minutes or until just cooked through.

    not bad...we will try different beer next time

    I thought that making the foil tray was the hardest part here when I had to carry it to the grill! LOL! We used Corona... Light and although it was not bad, I would use a darker beer next time. We cooked ours a little longer..about 11 minutes and I still would have cooked it longer. It had pretty good flavor and I did not use as much brown sugar as the recipe called for so we did not get the sweet issue that others did. Definately one to try again though and I can see how the beer can really change the flavor!Read more

    This was an excellent dish! The only thing I did different was cooking it in the oven in a covered dish.I also used white... onions since I forgot to buy the red ones. I don't know where others are coming up with an after taste, mine was excellent. I will be making it again!Read more
