Ingredients

  • 1 tablespoon canola oil
  • 1 tablespoon chopped garlic
  • 1 1/2 cups long-grain white rice
  • 2 1/4 cups water
  • 1 tablespoon chili seasoning
  • Salt and freshly ground black pepper
  • 1/2 medium red onion, diced
  • 1 yellow pepper, diced
  • 1 (14.5-ounce) can red beans, drained and rinsed
  • 1 tablespoon white vinegar
  • 1 tablespoon freshly chopped cilantro leaves

Directions

Heat oil over medium heat in a medium sauce pot. Add garlic, and rice and saute for 2 minutes until rice is toasted. Add 2 1/4 cups water, chili seasoning and season with a pinch of salt and pepper and bring to a boil. Cover, reduce heat to low and simmer for 15 minutes. Remove to a baking sheet and let cool.

In a large bowl combine onion, yellow pepper, cooled rice, beans, vinegar and cilantro. Mix well and serve with steak.

    Usually Sandra"s recipes are heavy on th spices......but not this time. I had to use my imagination,....and be creative in adding some flavorings from my quite large spice rack......If you don"t want to go to all the trouble of figuring out what all to add, ..then I suggest skipping this one recipe. Many of her other are very good. I guess we all can't be perfect with every recipe.....but she IS a professional. Perhaps she didn"t taste test it enough!!!

    Had no taste whatsoever.

    First, I hate giving reviews, so I really hate giving bad ones. I just felt that I had to post my review, before someone else attempts to make it. It still might be good to others, but for my family and guest it had zero taste. I too had this huge bowl of zesty salad left, but I had to throw away. I love Sandra's other recipes, I am a huge fan, just not to this recipe. I have made her other recipes, and they were all great.
