Ingredients
- 12 ounces rigatoni, cooked and drained
- 12 ounces hot Italian sausage, removed from casing
- 1/4 cup reserved cooking liquid from rigatoni
- 2 tablespoons olive oil and chopped
- 2 cups whole canned tomatoes, drained
- 3 cloves garlic, crushed
- 1 teaspoon red pepper flakes
- 3/4 cup heavy cream
- 1/2 teaspoon cayenne
- 1/2 cup parsley, chopped
- 1/2 cup Parmesan, grated
Directions
Heat oil in large skillet, Cook garlic, red pepper flakes and cayenne over medium high heat quickly. Add in crumbled sausage meat and cook until completely browned. Add in tomatoes and bring to a simmer. Cook about 5 minutes until sauce begins to thicken and add cream. Return to a rapid simmer. Season to taste with salt and pepper. Add cooked Rigatoni and reserved liquid. Return to simmer and sprinkle with parsley and Parmesan. Serve with extra Parmesan cheese and black pepper.

Delicious and super easy. I added in some onions and cooked with the garlic, and used sweet sausage. I only used 1 14 oz can of tomatoes (all I had, but added in a little extra plain canned tomato sauce I had. Added some basil while the sausage and sauce was cooking. To make it a bit healthier, I used about 1/2 cup of fat free half & half instead of heavy cream and came out delicious, just right. The dish was perfectly spicy, will definitely stick with sweet sausage next time, or if I used hot then will half the spices even further.

The other reviews said it was too spicy, so I lowered the cayenne and red pepper flakes by half. I also used about half the "liquid" from the can of roma tomatoes I used instead of draining it all...and I chopped half the can and pureed the rest in the food processor. I also did not use all the cream, and I used none of the cooking liquid. This was delicious and we will definitely make it again...maybe next time I'll sweat some onions with the garlic and spices too...that may give it a good extra flavor!

I liked it but I am gonna add more meat next time. My boyfriend really wanted to eat it because he thought it was super good but was to much of a spice after taste.
