Ingredients
- 2 cups buttermilk
- 1 cup all-purpose flour
- 1 egg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Directions
Mix all ingredients well in small mixing bowl. Pour by spoonfuls onto hot, oiled griddle. Spread batter to make thin, crepe-like pancake. Cook until batter is bubbly. Turn over. Serve immediately with butter and syrup or favorite fruit sauce.

The only thing wrong with this recipe is they should be upfront and call them crepes, though they may not be traditional with the buttermilk. I actually like to make them plain because I like the slightly savory taste whether with sweet things (fruit or maple syrup or savory (cheese, scrambled eggs, ham.
