Ingredients
- chick2 1/2 pounds skinless, boneless chicken breasts cut into small strips
- 2 1/2 cups panko bread crumbs
- 1/2 cup honey
- 2 tablespoons apricot preserves or jam
- 4 tablespoons raw sesame seeds
Directions
Preheat oven to 350 degrees F. Place sesame seeds in a frying pan over medium heat and toast for 3 to 5 minutes or until seeds are golden brown. In a small bowl, combine honey and apricot preserves. Stir to combine. Brush honey mixture on both sides of chicken strips, dredge in bread crumbs and sprinkle with sesame seeds. Line coated chicken on a baking sheet coated with nonstick cooking spray. Bake 20 minutes on each side until slightly browned.

The flavor was great. I read the reviews about the breading falling off due to the moisture in the chicken. I cooked the chicken in the oven on a wire rack and had no problem with the breading.

I'm sorry to say that I was not impressed with this recipe. As everyone else mentioned, the breading does not stay on the chicken, and I even fried it instead of baking (I was hoping to avoid the breading falling off, however, it still did not work. I also thought it was a little bland. I quickly made a honey mustard sauce and drizzled it over the chicken to add more flavor. I will not make this one again.

Like other reviewers the Panko crumbs got moist while baking and slid off when I turned the strips over. There was not much flavor considering I slathered them in the honey/apricot sauce. My husband said they weren't too bad - but he'd eat anything. :o I don't plan to make them again in the future.
