Ingredients
- 1 shallot, finely minced
- 1 teaspoon Dijon mustard
- 2 teaspoons red wine vinegar
- 1/4 cup extra-virgin olive oil
- 1 teaspoon sugar
- 1 teaspoon honey
- Kosher salt and freshly ground black pepper
- 6 cups arugula
Directions
Combine the shallot, mustard, vinegar, oil, sugar, honey and salt and pepper in a jar and shake to emulsify.
Toss arugula with vinaigrette, to taste.

I personally found the dressing delightfully sweet in contrast to the bitterness of the arugula. Paired with a nice steak or pork loin it truly works. I feel that those who think it's overly sweet perhaps have a palate issue or they are just eating it on it's own. Put it with something that isn't sweet, or perhaps pair it with something spicy and maybe it can be appreciated.

Im 14 years old, and even I could make this salad. It is easier than making pancakes. The dressing combined with the arugula does lean towards the sweeter side, but I read the comments below beforehand and knew to lessen the amount of sugar/honey. Simple side salad for dinner, add pecans for extra taste.
