Ingredients

  • 8 ears fresh corn, unhusked
  • Mayonnaise
  • Grated Parmesan
  • Cayenne pepper
  • Lime wedges, for serving

Directions

Preheat the oven to 350 degrees F.

Place the corn, in its husks, directly on the oven rack and roast for 20 minutes until the corn is soft when you press on it.

To finish off the corn, peel down the husks, remove the corn silk, and tie the husks in a knot so you can hold on to it like a handle. Char the corn on a hot grill, over a gas flame, or under a broiler, until the kernels are slightly blackened all around and start popping, about 6 minutes. Rub the corn with mayonnaise, sprinkle with Parmesan and cayenne pepper so it's nicely coated. Serve with lime wedges.

    My new favorite!

Rated: 5 stars out of 5
I've made this twice now and I'm totally in love with it. You can even make it for people who don't like mayo because... they'll never know it's in there. I don't have cayenne so I just use chili powder and it's excellent. I also use lemon juice because I don't have lime. I highly recommend people try this super easy, really flavorful recipe!Read more

This is my favorite way to eat corn! Also, growing up in Texas, I used to buy this from little stands where they cut the... corn off the cobb and mix it with mayo, hot sauce, butter, lime and soft mexican cheese. It is called elotes locos. Deeeeliicious!Read more

This is the best corn I've ever had! It's even a great way to prepare frozen or canned corn too.
