Ingredients
- 2 pounds Yukon Gold potatoes, peeled and quartered
- Salt and freshly ground black pepper
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons chopped parsley leaves
Directions
Preheat oven to 400 degrees F.
Put the potatoes on a baking sheet. Season with salt and pepper. Drizzle the olive oil and sprinkle the parsley. Toss the potatoes to coat. Roast in the oven, until golden and crispy on the outside, tender and cooked through on the inside, about 30 minutes.

Great, easy recipe! I didn't have yukon gold potatoes so used large red potatoes and quartered them twice. Also didn't have parsley, but had thyme (which was presented in the photo and they were terrific. Had to bake close to 45 minutes at 400 degrees to get them browned and crisped. This will definitely be my go to roasted potatoe recipe from now on. Thanks Tyler!
