My “perfect day” would be on the beach in the summertime, in Montauk, on Martha’s Vineyard, or on Lake Michigan, where I would sleep in, then mosey over to the shore and spend the day with the sand between my toes, swimming, kayaking, walking, and, of course, lounging. Dinner would be a clambake eaten on a picnic table—a festive, messy affair with friends and family all digging in together. This stovetop clambake brings my “perfect day” dinner to the table easily, anytime. All you do is layer clams and shrimp into a pot with fresh corn, baby potatoes, and celery, and after less than 20 minutes of cooking, pile it onto a platter, sprinkle with seasoning, and put it in the center of the table for everyone to share—no utensils necessary. It’s a pot full of good, healthy fun that can make a regular weeknight feel like a mini-vacation. Serve it with a big plate of ripe tomatoes wedges drizzled with extra-virgin olive oil and sprinkled with sea salt.

The name of this recipe may give the impression that it’s a bit fussy or complicated, but in fact, it is incredibly easy to make. You simply wrap a salmon fillet in a large collard leaf and grill it. While that’s cooking, you stir together a few ingredients for the creamy yogurt sauce, and presto! You turn a basic salmon supper into a remarkable meal. Serve with steamed broccoli or cauliflower tossed with a touch of butter and spritzed with lemon.

This recipe spins a classic puttanesca sauce of tomatoes, garlic, olives, and capers into a single-skillet meal by cooking chicken breasts in the pan to start, then making the sauce and cooking the orzo pasta together in the same pan. Convenience is not the only benefit—the method adds flavor, too, as the fond (the brown bits left in the pan) from the chicken flavors the sauce and the pasta both absorbs and thickens it. Served sprinkled with Parmesan and fresh basil, it gives new life to an old favorite.

On one hand there is beef barley soup, and on the other there’s mushroom barley soup, but why choose between the two when you can have both in one soup? Heck, why not add a bunch of other vegetables—carrots, celery, tomatoes, and chard or spinach—to the mix for even more color, flavor, and nutrition? And how about a handful of fresh dill for an earthy herbal essence? It’s that kind of thinking that led me right to this wonderful, filling, meal-in-a-bowl with tender beef in every bite balanced with a bounty of whole-grain, plant-powered goodness.

If there were an award for “most elegant, tastiest skillet meal made in less than 30 minutes” (and I think there should be), this dish would be the clear winner. With tender chicken breast in a lemony caper and white wine sauce that’s studded with artichokes served atop a mound of fresh arugula, it is beautiful on the plate, packed with flavor, and requires almost no chopping. The chicken is coated lightly in flour, which allows it to brown nicely and serves to thicken the pan sauce. (You can substitute a cup-for-cup gluten-free flour.) A tablespoon of butter takes the tangy sauce to the next level into luxuriously velvety territory. It’s just the recipe to hit refresh on your busy weeknight dinner routine and definitely good enough for company. I like to serve it with some crusty whole-grain Italian bread.

Crispy French Toast Fingers with Blueberry Maple Sauce

This dish is a satisfying mash-up of two comfort food classics—cauliflower with cheese sauce and risotto with shrimp and peas—which makes for a healthy, modern, and doubly comforting skillet dinner. The cauliflower, which has been grated so it resembles rice, is simmered briefly with flour-thickened milk and Parmesan cheese, forming a creamy sauce to coat the vegetable and create a risotto-like base. Shrimp and peas are added to the skillet, and minutes later the dish is ready to be served, garnished beautifully with ribbons of fresh basil and a shower of Parmesan.

My mom often served a version of this dish when I was a kid, and it was one of my favorites. I guess it makes sense that it has become one of my go-to fast and easy dinners too. It’s a weeknight trifecta—simple, tasty, and family friendly. All you need to do is sprinkle seasoned buttered bread crumbs onto a white, flaky fish fillet, and in less than 10 minutes the fish is done and the bread crumbs are crisped. I made it healthier by using freshly made whole-grain bread crumbs (which are a cinch to make) and adding some olive oil to the mix to keep the butter minimal. Roasting asparagus right alongside makes it a real two-for-one. Enjoy with some whole-grain rice, quinoa, or orzo.

You can have this meal on the table in less time than it takes for me to run a mile. Okay, I admit I am the slowest runner I know (I am more of a jogger, really) -- but still, that is a fast dinner. The key is taking advantage of canned lentils for a tender and hearty instant protein, as well as vegetables that require very little prep -- pre-washed baby spinach and grape tomatoes. They are seasoned in the skillet with chopped shallot, fresh thyme, and balsamic vinegar, then dolloped with creamy, rich ricotta cheese that is warmed slightly in the skillet, too. A sprinkle of fresh basil leaves takes you, deliciously, to the finish line for the win. I like to serve mine with some whole-grain, sourdough toast or baguette.

Shakshuka has earned a fashionable following these days, appearing on all the trendy restaurant menus and Instagram feeds. It is a traditional North African and Middle Eastern dish of eggs simmered in a skillet of spiced tomato sauce that can be served for pretty much any meal of the day. But while the red-sauce version is most typical, there are many creative variations possible. This version goes all green with a base of spinach and artichokes seasoned with cumin, coriander, garlic, and a hint of peppery heat, then topped with salty, creamy feta and fronds of fresh dill. It is out of the ordinary in the best possible way. Enjoy it scooped up with warm pita bread.

Here, tender chicken breast is seasoned with a flavorful chili-lime rub, then skillet cooked and served atop a saute of hearty black beans, sweet corn, and fresh tomatoes warmed until barely bursting. It is made savory and given a gentle heat with onion, garlic, and a kiss of jalapeno. (If you like a lot of heat, feel free to add more jalapeno and/or more cayenne in the rub for the chicken.) Finished with a bright note of lime juice, fresh cilantro, and creamy avocado, this is a colorful, satisfying meal that is on point any season of the year, and destined to become a go-to favorite.
