Ingredients

  • 2 quarts vegetable stock
  • 1 turkey carcass
  • 1 (10-ounce) box frozen mixed vegetables
  • 1/2 cup rice
  • 2 cups cooked turkey, cubed
  • 1 teaspoon Old Bay seasoning
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste

Directions

Combine the vegetable stock and the turkey carcass in a large soup pot over low heat and bring to a simmer. Cover and simmer for 1 hour.

Add the remaining ingredients to the stock. Cover and simmer for an additional 20 minutes.

Remove the bones before serving.

    I am not what you call a great cook when it comes to soup, but my husband raved and raved about this soup. It really is one... of the best Turkey soups I have ever made.     This is now a yearly thing with me. I have to use Alton's brine for our turkey, and the leftovers have to go to this soup. ... One thing I've changed is the simmering time for the bones to "give up their goods" and let all of the collagen into the stock. I pick the bones out before adding any of the vegetables or rice. It takes time but it's worth it! This soup is definitely THE place for your bird to end up after thanksgiving. Thanks again A.B. for another awesome recipe.Read more

    This recipe make soup a snap! I was always a bit intimidated by making soup, it seemed like a long arduous process. This... recipe took about an hour and a half but most of it was me watching TV while things simmered. Next time I will go without adding any salt and get low sodium stock as mine came out a bit salty... but that was poor planning on my part. This is also a great way to finish off a good eats roasted turkey :)Read more
