Ingredients
- 2 quarts vegetable stock
- 1 turkey carcass
- 1 (10-ounce) box frozen mixed vegetables
- 1/2 cup rice
- 2 cups cooked turkey, cubed
- 1 teaspoon Old Bay seasoning
- 2 teaspoons dried thyme
- Salt and pepper, to taste
Directions
Combine the vegetable stock and the turkey carcass in a large soup pot over low heat and bring to a simmer. Cover and simmer for 1 hour.
Add the remaining ingredients to the stock. Cover and simmer for an additional 20 minutes.
Remove the bones before serving.

WAY too much THYME!!! Glad I started with only one teaspoon of thyme or this would be in the trash. I agree with some of the other reviewers it was bland regardles of what I tried. OK for a quick soup but will not likely make it again. Lots of better turkey soup recipes around. Sorry Alton.

Really good, so easy! I didn't have any frozen vegetables or canned, oopsie. But I put in some roasted butternut squash cubes. very good, maybe a tad salty, i did use only 1 tsp thyme to start and didn't need more. A squeeze of lemon seems like it would have been welcome.
