Ingredients

  • 20 ounces fresh blueberries, approximately 4 cups, rinsed and drained
  • 2 cups water
  • 7 ounces sugar
  • 1 lime, juiced
  • Carbonated water

Directions

Place the blueberries and the water into a medium saucepan, set over medium-high heat and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Remove the saucepan from the heat and pour the mixture into a colander lined with cheesecloth that is set in a large bowl. Allow to cool for 15 minutes. Gather up the edges of the cheesecloth and squeeze out as much of the liquid as possible. Discard the skin and pulp. Return the blueberry juice to the saucepan along with the sugar and lime juice. Place over medium high heat and stir until the sugar has dissolved. Bring to a boil and cook for 2 minutes. Remove from the heat and transfer to a heatproof glass container and place in the refrigerator, uncovered, until completely cooled.

To Serve: Combine 1/4 cup of the liquid with 8-ounces of carbonated water and serve over ice.

    Great way to feel good about giving the kids soda!

    I love this recipe. When I'm sick there is nothing else that makes me feel better. Our kids are pretty young and we have... never let them have soda. Now they can without paying a fortune for "natural soda". I use about 1/2 cup of dark wildflower honey instead of sugar, and this last batch I used a small amount of raspberries as well as blueberries (1:5). The raspberry zing was a nice touch.Read more

    I've tried this with cranberries (although there is more pectin in cranberries, so I had to alter the recipe slightly) and it... worked beautifully. I have also tried other berries, all are great. I use it for 'soda' as well as syrup for pancakes and waffles. Thanks Alton! Read more

    Hi, Overall the syrup is very good and when you put enough in it makes for good blueberry pop. However, you need to use a... lot to make a soda so I'm not sure it was worth the whole bag of blueberries. Also, it was quite a bit thinner than I expected.Read more
