Ingredients

  • 1 cup half-and-half
  • 3 large eggs
  • 2 tablespoons honey, warmed in microwave for 20 seconds
  • 1/4 teaspoon salt
  • 8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
  • 4 tablespoons butter

Directions

In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.

Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.

Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

    I used my own egg recipe (which was the same basic idea as the recipe), but decided to try the cooking method. I wasn't sure... what the recipe meant by baking on the rack, so I just put all the slices on a greased cookie sheet after I cooked them on the stove top. Loved how it came out! The centers were like bread pudding Except some of the thicker slices (I sliced up a loaf of Italian bread) came out soggy. Will make sure to make them more even next time. Read more

    I've been making this recipe for years. Can substitute lowfat milk for the half-n-half and still get great results, though... maybe soaking the bread for half the time, since the thinner consistency of the milk will penetrate the bread more quickly. It's important to use stale bread to get the best taste and texture. I usually sprinkle cinnamon on the bread before frying. Today I skipped the honey and added a tsp of vanilla paste to the custard. It was equally delicious. Can top with sliced fresh or caramelized bananas, or blueberries and sliced strawberries. Be sure to use real maple syrup, it makes such a difference. I do think the oven step is key. I've tried skipping it and the inside of the bread comes out undercooked. Make your coffee while the toast finishes off in the oven, and then sit down to your lovely, restaurant-quality plate of deliciousness ;-)Read more
