Ingredients

  • 1 cup thawed, chopped frozen spinach
  • 11/2 cups thawed, chopped frozen artichoke hearts
  • 6 ounces cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/3 cup grated Parmesan
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder

Directions

Boil spinach and artichokes in 1 cup of water until tender and drain. Discard liquid. Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and serve hot.

    Everyone at the party loved this! I topped it with mozzarella and popped it in the oven. The red pepper flakes gave it a nice kick.

    The best ever! I did try to lighten it up by using Hellman's Light Mayo, Dannon All-Natural Non-Fat Plain Yogurt (instead of sour cream, & Reduced Fat Neufchatel Cream Cheese. I doubled the recipe by using 16 oz Neufchatel, 1/2 c plain yogurt, 1/2 c mayo, 3/4 tsp red pepper flakes, 2 small cloves of garlic minced, 1/2 tsp salt, 2/3 c grated Parm, 1-16 oz bag frozen artichoke hearts, 2-10 oz boxes frozen chopped spinach. I used a food processor to chop up the artichoke hearts & garlic. So light-tasting & delicious! I will also bake part of the batch in the oven at 350 deg later for about 20 min. so I can take it warm to a party.
