Ingredients

  • 2 cups pomegranate juice, not from concentrate
  • 2 envelopes unflavored gelatin
  • 2 tablespoons sugar
  • 1/2 cup pomegranate seeds

Directions

Place 1/2 cup of the pomegranate juice into a medium mixing bowl and sprinkle the gelatin on top. Set aside.

Place the remaining juice and the sugar into a small saucepan and place over high heat. Bring just to a boil. Remove from the heat and add to the juice and gelatin mixture, stirring to combine. Place the bowl into the refrigerator and chill, just until the mixture begins to set up, approximately 30 to 40 minutes. Remove from the refrigerator and stir in the seeds. Place into a 2 cup mold of your choice or 4 1/2 cup individual molds and chill until set.

I used a pomegranate juice called Lowell from World Market, which was not from concentrate. I too added more sugar as well as cherry vodka to make some upscale jello shots: 3c pom juice, 3+ packets gelatin, 1/2 cup sugar, and then mixed in 1 cup cherry vodka at the stage when Alton mixes in his arils. Easy and delicious!

We've used this recipe twice now using POM and both times it's come out wonderfully. I don't know what we're doing differently (we use Knorr unflavored gelatin if that makes a difference, but I thought I'd throw it out there that it can be done using POM.

I could not for the life of me find Pomegranate juice that actually wasn't from concentrate. I did however, find 100% Black Cherry juice. I used that, and it's pretty tasty. My mom thought it was a bit on the bitter side, but I rather liked the taste. It's not overly sweet, but if you want it a little sweeter, add more sugar.

As the person under me noted, Pom didn't work for this recipe. That's because Pom is made from Pomegranate concentrate, it's not 100% juice like it claims on the front of the bottle. Make sure to read the back of the bottle before trying this recipe.
