Ingredients

  • 1 (7-ounce) pouch albacore tuna, drained well and shredded by hand
  • 2 green onions, chopped fine
  • 2 teaspoons Dijon mustard
  • 2 large eggs, beaten
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup panko bread crumbs, divided
  • Olive oil, for sauteing

Directions

Place the tuna, onions, mustard, eggs, lemon juice, salt, pepper and 1/4 cup of the bread crumbs into a medium mixing bowl and stir to combine. Divide the mixture into 8 rounds and set aside on a parchment lined half sheet pan. Allow to rest for 15 minutes. Place the remaining bread crumbs into a pie plate. One at a time, coat each round in the panko on all sides.

Heat enough olive oil to cover the bottom of a 12-inch saute pan over medium heat until shimmering. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lined with paper towels. Allow to cool for 2 to 3 minutes before serving.

    These were good, the ingredients balanced each other nicely. I do agree with the other reviewers that 1 egg should suffice. ... I quickly threw in 2 eggs before remembering the reviewers' comments and had to counter by using more panko crumbs. Very nice, not too "fishy" and they held together well.Read more

    I made this tonight and served it with some coleslaw, and my 2 and 4 year old boys loved them! I also made a batch with... salmon and they turned out great. They were hard to keep together and dip them in the panko bread crumbs, but they were worth the extra care!Read more

    I made these for dinner last night and will definitely make them again. I love that can make these with ingredients that are... usually in my fridge/pantry anyways! I also used two small cans of tuna instead of the pouch and used plain bread crumbs instead of panko. I didn't have any trouble with them falling apart, but I did let mine sit for closer to half an hour instead of just 15 minutes. This recipe was the perfect amount for my husband and I to have for dinner, but you could easily double the recipe for more people.Read more
