Great recipe! I suggest draining the marinade after half an hour and sauteing or broiling the shrimp in the red onion mixture. I also added minced garlic and served it over pasta.

I've made this often with Margarita Mix (and no Vodka - it's a hit each time. Always served with fresh lime wedges, on fresh spinach leaves and crusty bread (or on rice to enjoy all the juices. This version sounds fresher if you have all the ingredients on hand. The Mix is just a faster prep (marinating time=15 minutes - also good for poaching Salmon filets.

After reading recipe and comments, I was anxious to make these shrimp. I was very disappointed with the results. My husband and I found the shrimp to be bland and lacking flavor. Would not make again.
