You can create up to five timers

Ingredients

  • 2 cups fresh mixed berries
  • 2 tablespoons sugar
  • 1/2 lemon
  • 1/2 cup sour cream
  • 4 crepes
  • Berry Coulis, recipe follows

Directions

In a bowl combine berries, sugar and a squirt of lemon. Toss to combine. Spread 2 tablespoons sour cream over crepe. Top with 1/4 of the berry mixture. Fold into quarters and serve with berry coulis. Repeat with remaining ingredients.

Berry coulis:

In a blender, combine all ingredients. Process until smooth. Pour through a fine-meshed sieve to remove the seeds and refrigerate until ready to serve. Yield: approximately 2 cups

    This recipe is incredibly easy and makes for a wonderful breakfast/brunch. We used packaged crepes from the store to make it even easier and faster in the morning. For the berry filling, we used strawberries, blueberries, blackberries, and raspberries -- but any combo. of berries would be delicious. Yum -- thank you, Sara!
