You can create up to five timers

Ingredients

  • 1/3 cup fresh lime juice
  • 1/2 teaspoon ground cumin
  • 2 cloves garlic, chopped
  • Few dashes Bobby Flay's Hot Sauce, or your favorite
  • 1/2 cup olive oil

Directions

Place all ingredients in a blender and blend until smooth.

  • 3 carrots, peeled and shredded
  • 1 medium head green cabbage, shredded
  • 1 red bell pepper, julienned
  • 1 red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper

Combine all ingredients in a large bowl, toss with the dressing and season with salt and pepper, to taste.

    It wasn't bad, but it wasn't exactly what I called good. I added honey as so many people did and the actual dressing was rather yummy. Thinking of making some green beans and tossing them in the dressing. The coleslaw was just way too dry for my taste and seemed to weak for the strong taste of the raw cabbage. I think that if you really like the taste of cabbage and a more dry slaw, then you would enjoy it, but for me, not my favorite slaw recipe. But seriously try just the dressing...that was very tasty.

    This is delicious and easy! It's a "go to' recipe for me for home or potlucks when I have little time or just 'cause I like it! If time is critical, I make the dressing and prep the veggies (except cilantro and red pepper up to 1 day ahead of time.
    Personally, I prefer the brightness of Slaws without mayo or sour cream and look for recipes without them. Honey or 1/2 honey & stevia to tame the lime works for me as well. I recommend this recipe!

    This is exactly what I was looking for. I love this coleslaw. I did change one part of the process. I salted the shredded cabbage first, let it drain for a couple hours, and then patted it dry. I do that with every slaw to keep it from being watery. I had to add 2 T of honey like other reviewers suggested, and then this was perfect on top of Aarti's mango pulled pork.
