Ingredients

  • 1/3 cup fresh lime juice
  • 1/2 teaspoon ground cumin
  • 2 cloves garlic, chopped
  • Few dashes Bobby Flay's Hot Sauce, or your favorite
  • 1/2 cup olive oil

Directions

Place all ingredients in a blender and blend until smooth.

  • 3 carrots, peeled and shredded
  • 1 medium head green cabbage, shredded
  • 1 red bell pepper, julienned
  • 1 red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper

Combine all ingredients in a large bowl, toss with the dressing and season with salt and pepper, to taste.

    I didn't think this slaw was too flavorful on its own, but it'd probably be good in fish tacos or with some complementing... dish. However, with some additions it was good enough to stand on its own. We added some honey and rice vinegar. This really added some depth and brought out some of the other flavors. Read more

    I had half a head of cabbage left over, so I halved this recipe, and it turned out great (Now I have half an onion and half a... bell pepper to use up.). As another reviewer suggested, I switched the lime juice and olive oil quantities so there was a bit less oil than the recipe called for.     I,too, was looking for a non-mayo based coleslaw and although this wasn't quite it, it sure is GOOD. I revised the... vinaigrette to have more lime juice than oil (just reversed the amounts called for). In tacos instead of the usual lettuce/tomato condiment I piled this salad on top of the taco and drizzled the vinaigrette--EXCELLENT. The vinaigrette goes well with taco seasoning. For a low carb option I made a taco salad--same taco filling, I used ground turkey--mixed it in with the coleslaw and added some chopped romaine to give the salad more body. It was fantastic. I wonder how this would work in fish tacos? Great, I imagine.Read more

    Fresh summer salad

    I loved this salad. I let it sit in the fridge dressed for about two hours before serving. I especially liked the... lime/chili/cilantro combination dressing - reminded me of ceviche. Will make again.Read more
