Ingredients
- 8 (1/2-inch) thick slices of country bread
- 1/4 cup olive oil mixed with 4 cloves crushed garlic
- 1 cup Monterey Jack cheese, finely grated
- 8 ounces soft goat cheese
- 2 tablespoons coarsely ground black pepper
- 2 tablespoons finely chopped oregano
Directions
Preheat grill. Brush each slice of bread with the garlic oil. Grill, oil-side-down until lightly golden brown. Turn each slice over and top with 2 tablespoons of Monterey Jack, 1-ounce of goat cheese, black pepper and oregano. Grill until cheese just begins to melt.

this was my first attempt at bruschetta. Very good and very easy. after reading other reviews I decided to go easy on the goat cheese. also added black olives and ro-tel tomatoes. It was a big hit.

I made these for a family get-together and left them open-faced. They were great but I think that adding more Monterey Jack and less goat cheese would have made them better (and I only used 6 ounces of goat cheese and not the 8 ounces recommended. Maybe 4 ounces...great cheese bread though!
