Ingredients
- 4 acorn squash, halved lengthwise, seeds and membranes removed
- 1/4 cup melted butter
- Salt and freshly ground pepper
- 4 cups fresh orange juice
- 1/2 cup light brown sugar
- 4 whole allspice berries
- 1 stick cinnamon
Directions
Preheat the oven to 350 degrees F.
Brush the cut side of each acorn squash with the butter and sprinkle with salt and pepper. Place squash, cut-side down, on a baking sheet and bake until almost tender, about 30 minutes.
While the squash is baking, combine the orange juice, brown sugar, allspice, and cinnamon in a medium saucepan. Cook over high heat until reduced to 1 cup, stirring often.
Preheat the grill to medium-high. Place the squash, cut side up, on the grill, and brush with the orange glaze. Cook for 5 minutes, turn over with tongs, and grill for 5 more minutes, or until tender and glaze is caramelized. Remove from the grill and brush with more of the glaze. Serve warm.

I'm always looking for flavorful vegetarian dishes - occasionally being veggie gets boring and I have to be careful not to revert to carb-heavy foods. A local restaurant does an excellent treatment of acorn squash with fruit juice, raisins, spinach, wild rice, etc. and I was looking for similar recipe. I think this is fantastic on its own but has lots of potential with some delicious fillings like walnuts, greens, dried cranberries, etc. Can be an excellent main course, not just a side. Another vote of confidence - my Peruvian boyfriend tells me this tastes like the pumpkin his grandmother used to make. He wants me to make it more often!

We eat a variety of squash regularly and grill outdoors several times per week so this recipe works great for us. I did use splenda instead of the brown sugar but still found a perfect side for any dish. Used my toaster oven and was impressed with how tender and moist the squash was. Amazing pairing of flavors. Quick and easy with so many compliments...I will be making this one quite a bit from here on out. Thank you Bobby for the new addition to my recipe box!
