Ingredients
- 2 medium ripe tomatoes
- 2 tablespoons finely diced Spanish onion
- 2 tablespoons chopped parsley
- 1 teaspoon red pepper flakes
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- Salt and freshly ground pepper
Directions
Combine all ingredients in a bowl and season with salt and pepper to taste. Serve at room temperatur

This was a great relish. I did sub cherry tomatoes that were ripe and very sweet for the regular tomatoes. I also did not have wine vinegar, so I substituted balsamic vinegar and it just complimented the recipe well. My husband really liked this relish alot. I served it with Bobby Flays Salmon with Sherry Vinegar Honey Glaze. The two are a wonderful compliment to each other. I highly recommend this recipe to everyone.
