Ingredients

  • 6 slices bacon, medium dice
  • 1 red onion, finely sliced
  • 3 cloves garlic, finely chopped
  • 3/4 cup white wine vinegar
  • 1/2 cup olive oil
  • 2 tablespoons granulated sugar
  • 4 sweet potatoes, peeled, cooked and cut into 1-inch dice, kept warm
  • Salt and freshly ground pepper
  • 4 green onions, finely sliced
  • 1/4 cup chopped parsley

Directions

Heat pan over high heat. Add bacon and cook until just crisp. Remove bacon to a towel-lined plate. Pour off all but 2 tablespoons of the fat. Add onions and garlic and cook until soft. Remove pan from heat, add vinegar, olive oil, sugar and reserved bacon. Place the potatoes in a large bowl, pour the dressing over and season with salt and pepper. Fold in the green onions and parsley. Serve at room temperature.

    I first experienced this recipe at a family gathering. It has become a "must have" holiday dish and one that I often make for "covered dish" gatherings. I do use a little less oil, and I like to add a couple teaspoons of balsamic vinegar on occasion for a change of pace.

    First time I made this recipe, it made too much dressing for only 4 potatoes, and my just right potatoes became mushy when I put the warm dressing over them. I liked the taste so decided to make it again. This time I used 6 potatoes and cooked them to just barely done (still had some firmness. My pantry had no white wine vinegar, so used seasoned rice vinegar. OMG! I think this is the only potato salad I will ever make again. I liked it the first time, loved it the second!

    I LOVE this dish!! I have made it several times for small dinner parties. Its a great deviation from standard potato salad if you are looking for something different. Plus, it is so easy to make. Once I tried to lighten it up a bit and used bacon pieces instead of "real" bacon. I then sautéed the onions and garlic in a bit of olive oil. Both ways came out delicious!
