Ingredients
- 1/2 cup freshly squeezed lime juice
- 1/2 cup honey
- 1 ripe watermelon, cut in 1/2, and halved again
- Mint sprigs, for garnish
Directions
Place lime juice and honey in a saucepan and heat on the grates of a hot grill or side burners. Bring to a boil and let boil for 2 minutes. Remove from the heat and chill. Place watermelon slices on a large platter and drizzle with the lime syrup and garnish with mint.

The syrup is the bomb!! it smells great when you're cooking it, and it goes perfect with the watermelon. Just whip it up in a pan on the grill, toss it in the fridge for a little bit, and there you have it. It's so freaking good, we were using the watermelon to try and soak up the syrup that was left over on our plates.

Soooo easy. Very yummy. And versatile too. I brushed it on some fresh pineapple slices and grilled them afterwards. Heavenly. Then I used it in a spritzer.
