A cake that happens to be a quesadilla? It's amazing! Layer tortillas with cheese and your favorite taco fillings, like beef or beans. Bake in a springform pan, and suddenly you have a quesadilla to serve to a crowd.
Preheat the oven to 400 degrees F. Grease an 8-inch springform pan with olive oil. Set aside.
In a large skillet, add the olive oil and place over medium-high heat. Add the onion and cook until softened, adding the garlic during the last minute, 4 to 5 minutes. Add the beef and cook until just browned, about 5 minutes. Sprinkle over the chili powder and cumin, then season with salt and pepper and cook another minute or so. Set aside and allow to cool.
Combine the two cheeses in a medium bowl.
Place a tortilla in the bottom of the greased springform pan. Top with a thin layer of the beef as well as some cheese. Repeat this six more times, reserving 1/2 cup cheese for finishing.
Bake for 15 minutes, shielding with foil as needed if the top gets too dark. Add the reserved 1/2 cup cheese to the top and bake until cooked through, another 5 minutes.
Remove from the oven and allow to set for 10 to 15 minutes before removing the side of the pan, slicing and serving.
Garnish with cilantro, sour cream and pico de gallo.
