Caribbean Garlic Sauce

Ingredients
  • 12 garlic cloves, crushed and minced
  • 1/2 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 large onion, thinly sliced
  • 1/2 teaspoon ground cumin
  • 1/2 cup olive oil
  • 1/4 cup lime juice
  • 3/4 cup orange juice
Directions

With a wooden spoon, blend the garlic and salt together. In a saucepan, heat the garlic mixture, pepper, onion, cumin and oil. Saute on low until the onion is translucent. Add the orange juice and lime juice and heat to a simmer. Serve over chunks of boiled yucca.
