You can create up to five timers

Ingredients

  • 1/4 cup good-quality balsamic vinegar
  • 1 tablespoon sugar
  • 8 (roughly 4 by 2-inch) pieces seedless watermelon
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons shredded mint leaves

Directions

In a small saucepan, whisk together the balsamic vinegar and sugar. Cook over medium heat until reduced by half and syrupy, about 4 minutes.

Stack 2 pieces of watermelon on each plate and drizzle with the balsamic reduction. Sprinkle with feta cheese and mint and serve.

    Love, love, love this recipe! I made it a couple of times, but moved and lost the recipe. I'm so glad to have it back! I'm having a dinner party in a week or so and I just know my guests will love it as much as I do!!! Thank you, Mary Nolan. As far as the disparaging remarks by samantha.maxwell, her post was in June of 2008. Maybe her palate has improved by now.

    Made this as an appetizer for grilled steaks and vegetables and it was superb. Perhaps it is an acquired tast, but I don't think so. This dish offers the notes for a perfect dish; it has sweet, salty, savory and a little punch from the herb. It is easy to make, just not exactly convenient. Have to have several free minutes from any other cooking obligation to make the reduction to serve and eat promptly.
