Ingredients
- 2 ounces olive oil
- 1/2 red onion, diced
- 4 tablespoons diced black olives
- 1/2 red bell pepper, diced
- 1 jalapeno, diced
- 2 cloves garlic, diced
- 1/4 cup diced artichoke hearts
- 1 1/2 pounds ground chicken
- 1/2 teaspoon Hungarian paprika
- 1/2 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 tablespoon minced fresh parsley leaves
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon celery salt
- 1/4 teaspoon ground sage
- 2 tablespoons seasoned bread crumbs
- 1 egg
- Ketchup
- Mustard
- Toasted sesame buns
- Lettuce
- Tomato
Directions
In a medium saute pan over medium heat add, 1-ounce oil and all raw vegetables and saute until translucent. Remove and cool.
Add veggies to raw chicken and mix thoroughly. Add all dry ingredients and egg. Thoroughly mix all ingredients and form into 4 patties. Cover and refrigerate for 30 minutes.
In same saute pan add remaining 1-ounce olive oil, and cook patties 2 to 3 minutes per side.
Serve with ketchup and mustard on toasted sesame buns with lettuce and tomato.

I loved these burgers. They had so much flavor and were so moist. I used two pounds of chicken instead of one and a half pounds. The four burgers were huge! I will definitely make at least six burgers out of the meat next time. I had to add more breadcrumbs because the mixture was so sticky that I could not form the meat into burgers. I did not add the olives, artichokes, or celery salt and they were amazing. To the person who wrote about the meat being the fat of the chicken...that really stuck in my head. So, I went to the store and looked at the ground chicken. All the package said for main ingredient was ground chicken for the ingredients, but I found chicken that was ground chicken breast(said this in ingredients too, which is what I wanted. I was gonna have the butcher grind up chicken breast for me, but I found this so everything worked out. So, thank you for that piece of information.

Holy-smokes!! You want a chicken burger with flavor?? You just found it! Sure, there are lots of ingredients, but nothing too expensive or exotic. Prep time takes a little bit longer than a plan burger, but the balanced flavor punch that this burger packs made it well worth it! I made my exactly to the recipe and I wouldnt change a thing. I've actually made this recipe a couple of times and substituted turkey once when I didnt have ground chicken on hand. It was still good, but I would recommend ground chicken. Like someone else said, these freeze well, so its ok to make extra and put them in the freezer for another time. Our family loves them so much that we typically eat them several nights in a row until they are gone.
