Ingredients
- 1/4 small red onion, cut into thin slices
- 1/2 seedless cucumber, cut into 1/3-inch dice
- 1 pound vine-ripe or Roma tomatoes, cut into 1/3-inch dice
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup basil-infused olive oil
- Kosher salt and freshly cracked black pepper
Directions
In a small bowl, soak the onion slices in icy cold water for 15 minutes. Remove from the water and pat dry. In a large bowl, add the onions, cucumbers and tomatoes and toss to combine.
In a small bowl, whisk together the lemon juice, olive oil and salt and pepper, to taste. Pour over the salad and serve immediately.
BYOC: Feel free to add some nice salty feta cheese to this dish to make a nice light lunch. You will be eating this salad all summer long and dreaming of it all winter. You can also chop all the parts the night before so when it comes time to serve all you have to do is mix it together.

A light, refreshing salad that's a good basic to have on hand. I didn't have an herb-infused oil and just used regular olive oil. Liked the ice water tip for the onions.

I made this for my fiance who loves tomatoes and red onions and he loved it! I tweaked it a bit and got a little creative. I added a couple dashes of red wine vinegar and dried oregano. I didn't have basil-olive oil so just used olive oil and some chopped parsley (didn't have basil on hand but it still came out delicious.
