Directions

Preheat oven to 400 degrees F. In a medium bowl add the grape tomatoes and 3 garlic cloves. Drizzle with 3 tablespoons of olive oil and sprinkle with salt, pepper.

In a 9 by 13-inch glass baking dish, place the tomatoes and garlic cloves, ensuring they are in just 1 layer. Roast for 20 minutes, and then stir. Add 2 to 3 tablespoons of hot water, if too dry in appearance. Return to the oven and cook for 20 to 30 more minutes.

When ready, the tomatoes will have begun to shrivel and the liquid in the dish should have thickened. Serve hot from oven.

    Absolutely delicious. My husband, who is always a pleasure to cook for, was especially enamored of this dish ... mentioned how delicous it was several times, even the next day. He has decided to plant grape tomatoes in our garden next year so we can have this recipe over and over and over!

    Instant hit!!! We have A small garden and more grape tomatoes then we knew what to do with, then I found this recipe. We may need to grow more tomatoes as good as this is. The only advice I have is I used glass cookware and it is really hard to clean so use some nonstick spray and be careful not to let anything get "cooked on".

    Up until now I would never eat tomatoes unless they were in a sauce. Not no more....I love these little gems! Being a garlic lover I did increase the amount of garlic...so tasty and so easy.
