Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 large onion, chopped
  • 1 teaspoon red pepper flakes
  • 1 clove garlic, finely chopped
  • 1 pound collard greens, chopped
  • 3 cups vegetable stock
  • 2 tomatoes, seeded and chopped
  • Salt and freshly ground black pepper

Directions

In a large pot over medium heat, heat oil and butter. Saute the onions until slightly softened, about 2 minutes, then add the red pepper flakes and garlic, cook another minute. Add collard greens and cook another minute. Add the vegetable stock, cover and bring to a simmer. Cook until greens are tender, about 40 minutes. Add tomatoes and season with salt and freshly ground black pepper.

    I am not the biggest fan of collard greens but made them for my husband. I added more red pepper and paprika and seasoned... salt to give it more of a kick. HOwever, I still tasted the bitterness. If I make this again I might add some lemon juice to counter act the bitter flavor. Otherwise, it was pretty good.Read more

    I really enjoyed this dish, it was flavorful and easy to make. I didn't use as much red pepper flakes as in the recipe,... since I was also feeding it to my kids and I also added the tomatoes right after I added the Veggie stock, so that the tomatoes were cooked nice and soft. This recipe would also be great for kale or swiss chard. I would definitely make this again.Read more

    You can use Smart Balance Light, I'm a vegan and it's what I use for everything. Still has the great butter taste, but it's... non-dairy and much better for you. Even my father who's a chef uses it. There's absolutely no difference in taste or texture and you can find it at a lot of regular grocery stores. It comes in a green tub. Good luck!Read more

    Great Taste and Easy to Make

    I love eating them, but never knew how to make them. Since it's time for New Year's Resolutions, I decided to eat more... veggies and cut back on heavy, fatty meats. This recipe is perfect! Hearty greens full of flavor. Inexpensive, and so easy even a klutz like me can make them. I thought the amount of red pepper flakes were too much spice, so I doubled the amount of greens, and cut back the pepper to 1/2 tsp. Thanks to the tips from other reviewers, I also added 2 tsp of smoked paprika, used 1/2 veggie stock and 1/2 chicken stock, and gave the final dish a few more pats of butter [Hey, I said I was cutting back, but not totally eliminating! he he he] You don't really miss the pork in the greens, and for some added protein, I pan fried some cubed tofu [I know, I know, I don't really care for it either, but I needed some sort of protein in my "vegetarian dinner night"] and added it on top of the greens right before serving. My dinner guests raved about the greens. I'll definitely be making these again, and soon. Thanks Sunny for adding a new, healthier dish that will make it easier to stick to my New Year's Healthy Eating Resolution! Read more

    Impressive!!! Love it!!!!

    I made a smaller batch of this and added a dash of cumin to the onions and garlic sauteeing. I also only cooked them in 1/4... inch of veggie broth so it could steam most of it for about 10 mins rather than 40 didn't want them too soggy. They turned out perfect!!!!Read more
