Ingredients

  • 1/4 cup vegetable oil
  • 1 red onion, thinly sliced (about 2 cups)
  • 1 red bell pepper, diced (about 2 cups)
  • 2 pounds sweet potatoes, quartered and cut into 1/4-inch slices
  • 1 teaspoon ground cumin
  • 2 teaspoons salt
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup green onions, chopped

Directions

Pour the oil into a large skillet and place over high heat. Add the onion and bell pepper and saute, stirring, 2 to 3 minutes. Add the potatoes, cumin, salt and red pepper flakes, lower the heat to medium-high and cook, stirring occasionally, for 25 to 30 minutes, or until the potatoes are fork tender and some are browned. The potatoes will begin to stick as they cook. Just continue to turn with a spatula. Stir in half of the green onions, top with the remainder, and serve immediately.

I've made this for brunch when I have guests a number of times. It's always a huge hit. It's an atypical brunch dish and it's... very flavorful.Read more

I made this for a big family dinner. Got lots of raves over the Sweet Potato Hash. One person who previously only "loved"... sweet potatoes "candied" with lots of sugar LOVED, LOVED, LOVED this recipe and couldn't believe that it was sooooo good without the extra sugar! I had to give her the recipe.Read more

    Amazing.

I had printed out this recipe a long time ago but never made it. Then when I was hosting a brunch, I wanted to whip something... up that would require few ingredients but would still be something a little special. Flipping through my recipes I came across this one and decided I would make it. What a hit. My brunch guest and I couldn't believe how good it tasted. Since then I have made this recipe every weekend without fail. It's become my default breakfast dish for weekends. The sweetness of the potatoes is perfectly matched against the smokiness of the cumin and zing of the red pepper flakes. Do yourself a favor and make this recipe today!! Read more

I've made this recipe twice in a week, and it's turn out wonderful both times. I added tempeh to it for some extra protein... and texture, and it makes a great entree that way. This recipe is very customizable as well, so you can add whatever you like or play with the quantities to suit your tastes.Read more

Great for picky "I don't like vegetables" adults

Rated: 5 stars out of 5
I have a very picky eater mother who seldom eats vegetables. I made this for breakfast when I visited her and added sausage... to it. Make a poached egg on the top of her serving and she ate everything. "This is really good!" was her surprised comment. I even made it a second time before I left. She has already requested I make it again on my next visit. I could even give it 6 stars.Read more
