Ingredients

  • 2 pounds green cabbage
  • 4 carrots
  • 1 medium yellow onion
  • 1/2 cup mayonnaise
  • 1/4 cup mustard
  • 2 teaspoons apple cider vinegar
  • 1 cup sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne
  • Salt and freshly ground black pepper

Directions

Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together.

In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.

    I Have to fix This cole slaw from now on

    My family requests this cole slaw every time I fix slaw. I used to make the bottled slaw because it was easy. Last year one... time I made this, and now I can't make any thing else because they only want this recipe. It is fantastic. If you want a little less heat, just don't put as much cayenne in.     I really doubted this recipe because of the onion and tons of sugar, plus it didn't look too appetizing.......but it sure was... the hit of the potluck at work!!! I highly recommend this recipe, which was so easy. I think that I might just have to make this for family functions as well.     This coleslaw is amazing! I admit, I DID make a couple of changes. I used 1/2 of the sugar, instead of yellow onion I used... green onions and I added almonds! It has been a HUGE hit at our house. In fact a friend had us make it for her wedding dinner. Read more
