You can create up to five timers

Ingredients

  • 2 cups spinach leaves, cleaned
  • 1 1/2 tablespoons Balsamic Dressing, recipe follows
  • 1/2 cup cherry or grape tomatoes
  • 1 hard boiled egg, chopped
  • 2 slices Canadian bacon, cooked in a grill pan and sliced into ribbons
  • 2 tablespoons chopped fresh parsley leaves
  • 1 whole-wheat pita, toasted and cut into quarters

Directions

Place spinach in a bowl. Add the Balsamic Dressing and the tomatoes and toss. Top with the egg, canadian bacon and parsley leaves. Serve with the pita pieces.

Balsamic Dressing:

3 tablespoons extra-virgin olive oil

2 tablespoons balsamic vinegar

1/2 teaspoon Dijon mustard

Salt and freshly ground black pepper

In a bowl, whisk together the olive oil, vinegar, and mustard. Season, to taste, with salt and pepper.

    I love vinegar, especially balsamic, and this dressing suits the salad perfectly. The balsamic makes it slightly rich, while still being a light refreshing salad! Good job Ellie!!!

    It was very easy to make, and is very light as well. All the flavors blend very nicely, and the balsamic dressing gives it a nice zing.

    Its starting to get a little freaky how I keep trying Ellie's recipes and none of them need any improvement. Even with my favorite magazines I find recipes I don't like that need tweaking. This salad was wonderful...I did use ham instead of canadian bacon b/c I could not find a nitrate free brand.

    If you are new to Ellie's recipes, so far we have enjoyed: Portobella Lasagna Rollups, Stuffed Turkey Burgers, Thai Style Halibut, and her energy mix (cherries & walnuts. But there are definately many more still on my list to try.
