Balsamic Chicken with Baby Spinach

Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, chopped
  • 2 (8-ounce) boneless, skinless chicken breasts, halved
  • 8 ounces baby spinach
  • 2 tablespoons balsamic vinegar
  • 1/3 cup low-sodium chicken broth
  • 1 cup low-sodium canned chopped tomatoes with juice
  • 2 cups whole wheat couscous, cooked

Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.

Place the couscous in a serving bowl. Top with the spinach, chicken and balsamic-tomato sauce.

    I found this recipe today and cooked it tonight. It is delicious. I did read the other reviews before preparing,so I... sprinkled the chicken with salt, pepper, and some Italian herbs before frying. I also skipped the couscous because we don't care for it. I added the garlic after the chicken was almost done, let it cook for about a minute, then added the balslmic and let it reduce a bit. I then added a can of diced garlic flavored tomatoes and the juice, let that reduce a bit, and then added the spinach. Next time I will reduce the olive oil and drain some of the juice from the diced tomatoes before added. We let the tomatoes and some spinach keep simmering while we ate, and it reduced nicely and made a great tomato-spinach dish. I agree that if you eat the chicken without the tomatoes/spinach it is a little bland, but I'm not sure why anyone would do that since the mixture is so good. I served the chicken topped with the tomato-spinach mixture and it was wonderful. Read more

    I made this a couple days ago and the chicken was bland because it wasn't seasoned well. Then, it was my first time making... cous cous. Preparation was quick and easy, that's why I give it 3 stars. But I just couldn't eat it. I tried leftovers and they weren't any better.     I made this for dinner for my family tonight, and it was loved by everyone! I followed the written recipe, rather than the... video demo as there seems to be some discrepancy.     This is very tasty, and filling. I am doing Weight Watchers so filling is important to me. This is seven points a serving. I... used quinoa instead of cous cous since that was what I had, and I cooked the quinoa in chicken broth. I also used the whole can of tomatoes. The combo of balsamic and tomatoes is so good.     I loved the flavor of the chicken and tomatoes. I'm not a huge fan of cooked spinach, but it was ok this way. I might try... it with broccoli next time instead of spinach. The only change I made was to salt and pepper my chicken breats prior to cooking, and I did use a whole can of tomatoes. I served this over brown rice. Will definetely be making this again!Read more
