Balsamic Chicken with Baby Spinach

Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, chopped
  • 2 (8-ounce) boneless, skinless chicken breasts, halved
  • 8 ounces baby spinach
  • 2 tablespoons balsamic vinegar
  • 1/3 cup low-sodium chicken broth
  • 1 cup low-sodium canned chopped tomatoes with juice
  • 2 cups whole wheat couscous, cooked

Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.

Place the couscous in a serving bowl. Top with the spinach, chicken and balsamic-tomato sauce.

    I loved the taste of balsamic with the couscous, tomatoes, chicken, and spinach. This dish turned out fancy enough to serve,... and tasted delicious. I would recommend making sure that the chicken breasts are halved, otherwise the garlic will cook too long in the pan and burn! Me and my husband both really loved this, the couscous was a nice addition, and it was so easy to make! I will make it again!Read more

    If you don't like this recipe, give it another try b/c you must have done something incorrectly!! This recipe has become a... staple dish and is now on the weeknight rotation. This is not a spicy dish but it has loads of delicious healthy flavor. I thought this was just amazing for the amount of time it took to prepare and it's completely healthy and light, so you can eat it without any guilt or worry about fitting into your size 4 jeans!     Great idea, but not much flavor

    My husband loved this but my son and I thought it was just ok. I used diced tomatoes instead of chopped since thats what I... had on hand. Next time I will used the diced that have added seasonings to give it more taste. I also seasoned the chicken withe salt and pepper before cooking. l My husband had the leftovers for lunch the next day and said it was even better than the night before.Read more
