Ingredients

  • 4 medium ripe but firm bananas
  • 8 wooden craft sticks
  • 3 tablespoons finely chopped lightly salted peanuts
  • 6 ounces good quality dark chocolate (60 to 70 percent cocoa solids), chopped

Directions

Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.

Place the peanuts in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Pour the melted chocolate into a tall glass. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the peanuts. Place on a tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.

    I'd like to add a couple of tips to this recipe that I've learned from experience. First, it's really important to let... your... bananas ripen until they are covered with *small* brown spots. That ensures that their sugar level is optimal. Next, when you freeze them, do not place them in a freezer bag. Moisture that evaporates from the bananas as they freeze will result in ice crystals on the bananas if it is trapped within a plastic bag. This ice will melt into the chocolate when you dip the bananas and cause the chocolate clump. If you do see ice crystals on the frozen bananas, brush it off prior to dipping them.     The headline says it all, you gotta make these, i didn't have craft sticks but i did have disposable chopsticks. I just cut... those in half and stuck the pointy ends through my bananas. Quick easy and delicious.Read more

    I love banana milkshakes so I thought I would try these since they were much less bad for you and they were just as good if... not better. These were so satisfying. One downside- they were very messy so make sure you eat over a paper towel. I would definetly make these again.Read more
