Ingredients

  • 2 cups shelled edamame, cooked according to package directions
  • 1 cup silken tofu, briefly drained of excess liquid
  • 1/2 teaspoon salt, plus more to taste
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 1/3 cup lemon juice, plus more, to taste
  • 1 1/2 teaspoons cumin, plus more, for garnish

Directions

Set 1 tablespoon of edamame aside for a garnish. Place the rest of the edamame, tofu, salt, garlic, oil, lemon juice[, and 1 1/2 teaspoons cumin in the bowl of a food processor and process until very smooth, about 2 minutes. Season with additional salt and pepper, plus more lemon juice, if desired. Remove to a serving bowl and garnish with reserved edamame, and some cumin.

    Doesn't taste like hummus

    I was very disappointed with this recipe. I like edamame, but this recipe made think twice about liking edamame. The... "hummus" didn't taste anything like hummus and didn't have much of an appetizing flavor at all. The only way that this recipe was somewhat tolerable was by eating them with her very flavorful spicy pita chips recipe. I won't be making this recipe again.Read more

    Excellent but, try substituting.....

    I love soybeans so I was pretty excited to try this recipe. I followed the recipe pretty much to the T but left out the cumin... (i didn't have any on hand) and substituted the lemon with 1/4 cup of low sodium soy sauce. I like it but that's me! Read more

    The lemon was way too overwhelming, and I used less than what was called for. The dip itself was too dry, so I had to add a... little extra olive oil. Over all, I was not impressed. I personally didn't like the combination of cumin with edamame. I think I will stick with edamame in its natural form with a little bit of sea salt. Read more

    Spice it up, but worth a try!

    I've been eager to try this recipe ever since seeing it on the show. I love edamame steamed in the pod, with salt, and I love... hummus, so I was eager to see how the two could become one. The recipe was easy to prepare, and now that shelled edamame are available in nearly all frozen food departments, the ingredients were all staples in my household. I would recommend making sure that you have truly *silken* tofu, not just soft - the texture will be MUCH creamier and the color more consistent. I also had to increase the spices and salt substantially - more than double - to keep the dip from being dismally bland. But once I got the spice-issue resolved, I really liked the outcome. Particularyl when served with the Spiced Pita Chips from the same episode, I'd recommend this as a healthy, tasty and visually appealing addition to any party spread. Read more

    Healthful, but bland

    Maybe I?m too hung up on semantics, but hummus is made with chickpeas. In fact the name means chickpea. Why not just call... this an edamame dip? Since other than the fact that it's made with a pureed legume, there is little resemblance. Why not pair it with flavors common to the cuisine edamame and tofu are indigenous to? Perhaps soy for saltiness or some rice wine vinegar for acidity? Overall, the "hummus" was okay, but prepared as written, incredibly bland. I added significantly more cumin, lemon juice, and salt, and it was still just okay. I wanted to like it because IT IS healthful, but couldn't give more than an average rating.Read more
