Ingredients

  • 2 teaspoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed
  • 1 tablespoon minced chipotle pepper in adobo
  • 4 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 2 cups corn kernels (10-ounce box frozen corn)
  • 1/4 cup chopped cilantro leaves
  • 2 ripe avocados
  • 4 medium tomatoes, seeded and diced (about 2 cups)
  • 1/4 cup thinly sliced scallion
  • 1 tablespoon finely diced jalapeno pepper, optional
  • 3/4 cup shredded extra-sharp Cheddar

Directions

Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.

Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.

Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.

In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.

Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

    good but time consuming!

Rated: 5 stars out of 5
This was a very good dip, but it took me about an hour to make and I had A LOT of pans/bowls/utensils to clean up afterward. ... I don't mind the mess for a real meal, but it was a lot of work for a dip. Still, the recipe is good and healthy and I'd probably make it again.Read more

    My Favorite Dish

Rated: 5 stars out of 5
This is my favorite dish of all time. My husband and I love Mexican food and are health nuts. It is nice to see those two... things combined. We eat this as a meal once a week and it is so easy to make! I have made it for parties and potlucks and get lots of great feedback! The flavor will suprise you! Read more

    great party dip

Rated: 5 stars out of 5
I made this dish for a party and was proud of it. It tasted very fresh and holds up well (compared to appetizers that are... cooked and don't do as well sitting out for a couple of hours). Be sure to use avocados that are ripe enough, and you won't have trouble spreading it in a layer. I love it that this is a healthy appetizer. I used reduced fat cheese. I probably won't make it except for special occasions because it takes a lot of time.Read more

    great party food

Rated: 5 stars out of 5
I've made this dip twice now and it is wonderful. Everyone loves it. My one tip would be to make sure you don't get your... beans or guacamole runny at all or your dish will have water in it.Read more

EPIC GOOD And Exceeded All Expectations

Rated: 5 stars out of 5
I made this for a New Years Eve Party. At first I was concerned that the guacamole had too much lime flavor to it, however... once put together with everything else it was mouth watering. OMG. The Bean dip was the best ever not like your traditional unhealthy refried beans. I can't wait for Superbowl to make it again for a large crowd and see the look on peoples facesRead more
