Ingredients

  • 2 pounds red-skinned sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt

Directions

Preheat oven to 350 degrees F.

Peel and cut the sweet potatoes into 1-inch pieces and put in a 9 by 13 baking dish. In a small bowl whisk together olive oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender.

    I made these for my parents who aren't necessarily into healthy stuff. They loved it!! I enjoyed the taste as well but I... thought it could use a little more kick to it. The next time I made it, I seasoned it with Lawry's, cinnamon and a little chili powder. It took the taste to a whole new level! I could eat these every week!Read more

    Might have used a little too much glaze, but they were chewy/crisp on the outside and nice and soft on the inside. Perfect! ... I added a bit more lemon juice to cut the sweetness of the honey, and I could see where a dash of chili powder or black pepper would be good to add some kick. Read more

    My family loved these sweet potatoes. I am always looking for new ways to make them and this recipe is definitely a keeper.... I only changed a couple of things. One was to add a tad more oil to the glaze as it was too thick to toss with the potatoes. Then I also took the advice of some other reviewers and bumped up the heat a bit and cooked for only 45 minutes. Perfect!Read more
